Orange Peach Punch

Ingredients

  • 1 liter of ginger ale soda (diet) or lemon-lime soda (diet) or ginger kombucha, or play with a combination of these options
  • 2 cans of peach nectar
  • 4 cups of orange juice
  • 1 orange sliced ​​or sliced
  • 1 peach cored and thinly sliced
  • Optional: add vodka

Instructions

1. Add all ingredients to a punch bowl or pitcher. Stir until well combined. Serve immediately. Enjoy!

Slow Cooker Corn (and Blue) Corn Soup

Ingredients

  • 14 ears of fresh yellow corn, divided or 10 cups frozen yellow corn kernels
  • 2 ½ cups chicken broth or vegetable broth
  • 2 medium red potatoes (about 1 ½ lb), peeled and diced
  • 1 small yellow onion, minced
  • 4 sprigs thyme
  • 3 garlic cloves, crushed
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 4 slices of thick-cut bacon, cooked and crumbled
  • ½ cup finely chopped red onion or a very small red onion
  • 2 tbsp. chopped fresh chives
  • 2 tbsp. fresh lime juice (from 1 large lime)
  • 1 cup heavy cream

Instructions

  • Cut the corn kernels from the cobs with a sharp knife. Reserve 1 cup of corn kernels. Place the remaining corn kernels in a 5- to 6-quart slow cooker. Add the broth, potatoes, yellow onion, thyme sprigs, garlic, salt, and pepper to the slow cooker.
  • Cover and simmer until the potatoes are very tender and the soup has thickened slightly, about 6 hours.
  • Meanwhile, combine 1 cup of reserved corn kernels, bacon, red onion, scallions, and lime juice in a small bowl. Chill until ready to serve, up to 6 hours before.
  • Remove half of the soup and reserve. Process the remaining soup in a slow cooker with an immersion blender until smooth. (Or transfer half the soup to a blender and remove the center piece from the blender lid to allow steam to escape. Secure the lid; place a clean towel over the lid opening and process until smooth) .
  • Mix reserved and pureed clam chowder in slow cooker. Add the heavy cream.
  • Serve hot with the prepared corn and bacon garnish. Optional to serve with blue corn chips. Enjoy!
